If you’re a Rock Chocolate fan, get A whiff of Bruges’ Bad Boy Dominique Persoone.
Bad boy Colin Farrell may have whipped his cinematic skills in to a filmic frenzy making him worthy of a Globe and a quaint medieval city worthy of all of the attention it’s getting. But once In Bruges, there are several stars in town. Belgian bad boy, Dominique Peersone, a self proclaimed Shock-O-Latier has a global following and groupies that line up outside of his shop at all hours of the day and night on any given day of the week. His award winning chocolate shop, The Chocolate Line is appropriately named.
Persoone, with his boyish charm and rock star sexiness, came to a life of all things chocolate quite by accident. The chef was instantly seduced by the sumptuous wonder after studying pastries, which is where he found his great muse. To hear him speak of the passion and the process is quite seductive.
Similar to a culinary chef, Persoone experiments in the kitchen, brainstorming twice a year with Heston Blumental of Fat Duck (UK) fame. His 60 or so sensual varieties include wasabi, garlic, black olive, basil, burnt Cuban cigar, tequila, an effervescent cola that explodes in the mouth and his chocolate shooter, designed specifically for Brits bad boys, The Rolling Stones. Snorting chocolate with ginger or mint can definitely be mind altering.
The Chocolate Line is one of only three Michelins star chocolate shops in the world. Persoone’s book Cacao won “Best Chocolate Book of the World” in Paris in July 2009, awarded by Best in the World Gourmand.
